Fig Jam from Provence

Les Figuieres are Jacqueline and Francis Honore, from Graveson, Provence, where they grow a variety of figs which they turn into incomparable fig jam. The confit du figues blanches is made with Dauphine figs, producing a sweet, delicate, more 'feminine' jam (their words, not mine), while the dark jam is based on Jacqueline's grandmother's recipe - rich, perfumed and sweet.
